Loaded Baked Potato & Chicken Casserole

A wonderful week night casserole the whole family can enjoy! It's a nice twist on the regular baked potato casserole.

Ingredients

  • 2 lbs chicken breasts, cubed or shredded
  • 10-12 small red potatoes diced
  • 1/2 cup olive oil
  • 1  tsp. salt
  • 1 TBS. freshly ground pepper
  • 1/2 TBS. garlic powder
  • 2 c. Mexican Blend Cheese
  • 1/2 c. crumbled bacon
  • 1/2 c. chopped green onion
Directions

Preheat your oven to 475.  In a large bowl, mix together olive oil, salt, pepper, garlic powder.  Add the potatoes and coat with mixture.  Place the potatoes into a greased baking dish, leave as much of the mix as possible.  Bake potatoes for 1 hr, flip the potatoes every 15-20 mins. Check with a fork to ensure the potatoes are done.  While the potatoes are baking, coat the chicken with the left over mixture and cook in a skillet over medium heat, until the chicken is done (no longer pink inside!)  Once the potatoes are done, take them out of the oven and turn the oven temperature down to 400.  Add the chicken, cheese, bacon & green onions. Put the casserole back in the oven and bake for 5 minutes or until cheese is melted.  Serve with sour cream  or ranch dressing

This sounds absolutely delicious! Combining all our favorite flavors. I do have a question...is the chicken supposed to be cooked prior to mixing in with the potatoes? I am your newest Networked blogs follower. I hope you'll stop by posed perfection for a visit soon and maybe even a follow back. Have a great weekend!
Blessings,
Nici

How did you cook your chicken? In the oven? Skillet? Or ???

SwishDesigns said...

(Did my comment go through? I keep getting an error from google).

Did you cook the chicken in the oven? A skillet? Or ????

Amanda said...

You can cook it whichever way you like. I cooked it in a skillet over medium heat :)

I used ground chicken instead of cubes, but other than that made it as is. My 10 year old step son promptly burst into tears when I announced casserole was for dinner...then I took it out of the oven and he said, "Hey, that actually looks good." It was so good two suborn step kids actually had to admit they liked it.

I'm so glad ya'll liked it!!

Making this tonight for dinner with turkey bacon. Should the bacon be cooked prior to adding in the casserole?
Thanks!

Amanda said...

Sounds yummy! Yes, the bacon should already be cooked and crumbled up :)

Can you use regular potatoes?

Anonymous said...

Found your recipe while looking for something to do w/ leftover rotisserie chicken, and Yukon gold potatoes. I substituted diced spiral cut honey-baked ham for the bacon. Hubby gave me 'permission' to make this anytime! Thanks!

Chinell said...

Found this on pinterest and its cooking as I type! Smells amazing, we can't wait to eat dinner tonight! :)

Was wondering do you mash the potatoes up somewhat?

Anonymous said...

I found this recipe on pinterest. It looks really yummy. The potatoes are baked at 475 degrees for 1 hour, is that correct? Are they whole or diced when you bake them?

Cindy said...

Oh my goodness! I made this for dinner tonight and it was wonderful. Everyone loved it and had seconds -- even a picky 17 year old boy :) Found this on pinterest; thanks so much for sharing!

I made this casserole last night and it was amazing. I will be making this again, thanks!

I made this tonight, I used the pre-diced potatoes from the refridgerator section, that took off about 1/2 an hour on the time, this was a huge hit. Thanks!

Debbie Sue said...

I'm thinking a quick version might be to steam the potatoes and then toss them in the mixture. You can then toss already cooked chicken in the mixture, and then add the rest and bake. I might turn it down to 375 and give it 10 minutes for the chicken to warm completely. I think I'll try that tonight. It just sounds delicious. Thanks, Deb

SO yummy!!! I added a couple of shakes of Tabasco and a few shakes of ranch powder mix. My picky husband LOVED it and told me to put stars next to this recipe so I will make it again. Thanks so much!

How many people does this feed??

Sahlee Santos said...

This made my mouth water...it looks delicious. One stupid question though...I have to boil and mash the potatoes first right?

Made this for Father's Day. Excellent. I am a bit lazy so I just baked the potatoes, smashed them into the bottom of a pan and layered the rest on top. Will be making this again. Thanks for sharing. Ahorsesoul in WI

I cannot wait to make this recipe tonight! Is there a place where I can find the nutritional value so I can make adjustments if I have to?

I am trying this out tonight but I have a quick question. Am I reading it right that I use 1 Tablespoon of Black Pepper? I also wanted to know if I can mix red and white idaho potatoes together for this? I love all of the ingredients listed so I am sure I will love this! Thanks for the great recipes!

OMG!!!! my hubby is on a special diet and when I fixed this for him he was worried he was having something he wasn't supposed to. I used the Turkey bacon and he LOVED IT!!!! SO DID I!!! I will be fixing this more often!!!!! Thank you for a marvelous receipe!!!!!

Has everyone cooked the potatoes at 475 for one hour? That just seems like the potatoes would cook way too fast and be mushy. Thanks for any input! The casserole looks wonderful.

The first time I saw this recipe I was at work and I got home and I couldn't remember everything exactly right, so i added green and red bell peppers to the dish and it was SOOO delicious. i cooked the chicken with random spices, and then i diced up all the potatoes and put them in a bowl with the same spices, and then poured the olive oil over it and mixed it up. then when the chicken was done i cubed it up and threw it in a different bowl with the bell peppers and the bacon and a little cheese. then i mixed it all together in the baking pan, put cheese on top, covered the pan with tin foil so the potatoes would bake faster, and baked it for about 20 minutes on 425. almost the bombest thing I've ever made, and i like to experiment!
